     AYDIN ENGİNARI 

Aydın Enginarı, registered under application number C2023/000202 by the Aydın Commodity Exchange on August 8, 2023, was granted protection by the Turkish Patent and Trademark Office on January 10, 2025, following examination. Also known as the "Sakız Artichoke Variety," it stands out with its resin-like flavor profile. It has a thin receptacle, fleshy flower heads, and a conical, water-glass-shaped head with a diameter of 7.0–10.0 cm. The plant’s leaves are flat and thin, while its stem is slender and delicate. The head of the artichoke begins to form in January, with peak head formation observed in March, April, and May. Aydın Enginarı can be consumed with its leaves and stem, or prepared as whole heads or stuffed artichokes.
